Mexican-girl-me had a hard time believing watermelon could be enjoyed without Tajin, but apparently it's possible... and so here we are, a recipe!
What I used (serves about 3 people):
- 4 cups of washed spinach
- 2 whole round slices of watermelon - cut into smaller portions
- 1 cup of washed blackberries
- half a cup of blue berries
- 2 tbsp of sunflower seeds
- 1 lime
Mix all of the fresh ingredients in a bowl with a squeeze lime's juice and salt for seasoning.
I like to stick my bowl into the freezer for a minute or two before eating, for a little bit of extra crisp.
